Delicious Healthy Salad with Sour Cream-Garlic Dressing

Dressing:
Garlic (3 medium size cloves) -Minced
2 stems and leaves of coriander- Minced
125 ml/half box Del Monte All purpose cream
pinch of pepper and salt
2 tbsps vinegar (Datu Puti)

Mixed all together.





Salad:

10 small potatoes (unpeeled & quartered -stir fried in very little oil or boiled a bit)
2 ripe medium size tomatoes (remove seeds and dice)
1 small fuji apple (diced)
1 Carrot (peeled and sliced into strips)
1 small ice berg lettuce/Romaine

Toss everything and chill for 5-10 minutes..You can also add some cashew nuts for some crunch.. :)
**It's a good side dish for fried viand.



**I used Del Monte Cream because it has 50% less cholesterol and 0% trans fat
**Datu puti is more sour compared to other vinegars. Taste the dressing if the sourness is right for you
**The apple gives it a sweet taste. Canned sliced pineapple may also be used but Fuji apples are crunchier. Apples are also a good source of fibre, boron and has a lot of antioxidants

**Potatoes are rich in Vit. B which is good in providing energy
**Garlic is good in maintaining blood lipid level at healthy level
**Carrots are good source of Vitamin A and beta carotene
**Tomatoes has vitamin A & C, lycopene, iron and pottasium. It is also a good blood purifier.
**Iceberg Lettuce provides chlorophyll, choline and Vitamin K. Try Romaine lettuce also. It's said to contain the most nutrients of the lettuce family.
