Camote Tops Kinilaw

Ingredients:

Camote(Sweet Potato) Leaves - blanched
1 md sized Cucumber - unpeeled, diced
small ginger (minced)
half onion(minced)
2tbsp vinegar
3tbsp lemon juice/kalamansi
1 tbsp. olive oil
pinch of salt and pepper



Toss together in a salad bowl and chill. Best eaten when chilled.

  • Camote leaves are good source of Vitamin E (Alpha Tocopherol), Niacin and Phosphorus, Dietary Fiber, Vitamin A, Vitamin K, Thiamin, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium and Manganese. It is highly a good anti-oxidant because of its phyto nutrients.




  • The cucumber ,aside from adding crunch to the salad, is also nutritious having Vitamin C and caffeic acid, both of which help soothe skin irritations and reduce swelling. Cucumbers'hard skin is rich in fiber and contains a variety of beneficial minerals including silica, potassium and magnesium.




  • Onions and ginger have long been known as medicinal herbs because of their antibiotic characteristic. Because of their small size in this salad, eating them is not so yucky.




  • Scanty amount of sesame oil is used scantily just to add a sort of 'grilled" flavor the salad. Sesame oil is known to have manganese, a miniral that aids in the formation of connective tissue, bones, blood-clotting factors, and sex hormones and plays a role in fat and carbohydrate metabolism, calcium absorption, and blood sugar regulation. Manganese is also necessary for normal brain and nerve function. However, the oil is high in polyunsaturated fatty acids so it should be minimized.
